Crunchy Salmon

ROASTED SALMON WITH CRUNCHY SWEET POTATOES

INGREDIENTS FOR 2 PERSONS:

300 gr sweet potatoes, a bunch parsley, 4 tablespoons olive oil, 2 salmon filets, salt, pepper, nutmeg

DESCRIPTION:

  1. Peel the sweet potatoes. Cut into thin slices.  Chop parsley. Put into a deep plate. Heat 2 tablespoons of olive oil in pan. Salt the salmon. Preheat oven.
  2. Roast salmon gently for 2 minutes from each side and roll them afterwards in parsley. Fry sweet potatoes slices in pan for 5 minutes till light brown.
  3. Put salmon and sweet potatoes together in oven. 8-10 minutes.  Sprinkle with caramel sauce or balsamico.

Dip: Crème fraîche, mayo, dill, salt, pepper, garlic, lemon.

Drink: 2/3 water, 1/3 pineapple juice, elderflower syrup
